
Ingredients
Toasted Sesame Seeds
- 2 Tablespoon White Sesame Seeds
- 2 Tablespoon Black Sesame Seeds
Rice
- 3-1/2 cup Water
- 1 teaspoon Salt
- 1-3/4 cup Rice
- 3 Tablespoon Rice Vinegar
- 1-1/2 Tablespoon Toasted Sesame Seeds
- 1 Tablespoon Sesame Oil
- 1 Tablespoon Mirin
Tuna
- 1-3/4 pound Sashimi Tuna
- 3 Tablespoon Soy Sauce
- 2 Tablespoon Lime Juice
- 1-1/2 Tablespoon Toasted Sesame Seeds
- 1 Tablespoon Mirin
- 1 Tablespoon Sesame Oil
- 1 Tablespoon Honey
- 1/4 teaspoon Wasabi Powder or Paste
- 2 Green Onion, chopped
Poke Bowl
- 2 cup Cucumber, 1/2″ cubes
- 1 Carrot, julienned
- 5 Radishes, sliced thin
- 1 Avocado, sliced thin (optional)
- 1 Tablespoon Toasted Sesame Seeds
Directions
Toasted Sesame Seeds
- In a saute pan, add sesame seeds and cook over medium heat until the white sesame seeds begin to golden. Remove from heat and set aside.
Rice
- Bring water and salt to a boil. Add rice, reduce to a simmer, and cook covered for 20 minutes.
- Add rice vinegar, toasted sesame seeds, sesame oil, and mirin to rice and fluff with a fork to mix ingredients together. Set aside.
Tuna
- Cube tuna steaks into 1/2″ squares. Mix the remaining tuna ingredients together in a bowl and then add the tuna. Stir together. Cover and refrigerate until ready to assembly the poke bowls.
Poke Bowl Assembly
- In individual bowls, place a scoop of rice. Top with tuna and veggies. Sprinkle with remaining toasted sesame seeds.
