
Ingredients
- 1 Tablespoon Olive Oil
- 1 cup Corn Kernels
- 1 teaspoon Chili Powder
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika
- 1 Rotisserie Chicken, cubed
- 3 Stalks celery, chopped
- 1 cup Cilantro, chopped
- 1/2 cup Red Onion, diced
- 5 Tablespoon Pimento
- 1-1/2 cup Mayonnaise
- 2 Tablespoon Sriracha
- 2 Tablespoon Spicy Brown Mustard
Directions
- Heat olive oil in a small pan: add corn, chili powder, cumin, and paprika. Saute for 3 minutes over medium heat until just toasted.
- Mix corn, chicken, and all remaining ingredients together in a large bowl.
- Enjoy on bread for sandwiches or with crackers as a dip!
