Ingredients 

  • 1 Tablespoon Olive Oil
  • 1 cup Corn Kernels
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin 
  • 1/2 teaspoon Paprika 
  • 1 Rotisserie Chicken, cubed
  • 3 Stalks celery, chopped
  • 1 cup Cilantro, chopped
  • 1/2 cup Red Onion, diced
  • 5 Tablespoon Pimento 
  • 1-1/2 cup Mayonnaise 
  • 2 Tablespoon Sriracha 
  • 2 Tablespoon Spicy Brown Mustard

Directions

  1. Heat olive oil in a small pan: add corn, chili powder, cumin, and paprika. Saute for 3 minutes over medium heat until just toasted.
  2. Mix corn, chicken, and all remaining ingredients together in a large bowl. 
  3. Enjoy on bread for sandwiches or with crackers as a dip!
