Ingredients

Rice

  • 2 cup Rice
  • 4 cup Chicken Broth
  • 1-1/2 teaspoon Salt
  • 1-1/2 Tablespoon Butter
  •  1 teaspoon Garlic Powder 
  • 1 teaspoon Black Pepper

Creole 

  • 1 Tablespoon Olive Oil
  • 1-1/2 cup Red Pepper, diced
  • 1 cup Onion, diced
  • 2 stalks Celery, diced
  • 4 cloves Garlic, minced
  • 1 Jalapeno, minced
  • 3 Tablespoon Cajun Seasoning 
  • 3 cup Tomatoes, chopped
  • 1/4 cup Parsley, chopped
  • 1 teaspoon Sugar 
  • 1 pound Shrimp

Directions

Rice 

  1. Thoroughly rinse rice. Bring broth to a boil in a large suacepan. 
  2. Add rice and remaining ingredients, return to a boil. Cover and simmer 30 minutes. 

Creole 

  1. Heat olive oil over medium heat in a saucepan. Add red pepper, onion, celery, garlic, and jalapeno and saute 5 minutes. Add cajun seasoning to the pan and saute another minute to toast the spices. 
  2. Add tomatoes, parsley, and sugar. Stir together and simmer, covered, for 30 minutes. 
  3. Stir in shrimp and cook 5 minutes, or until shrimp is cooked through. 
  4. Serve over rice and enjoy!
