Rice
- 2 cup Rice
- 4 cup Chicken Broth
- 1-1/2 teaspoon Salt
- 1-1/2 Tablespoon Butter
- 1 teaspoon Garlic Powder
- 1 teaspoon Black Pepper
Creole
- 1 Tablespoon Olive Oil
- 1-1/2 cup Red Pepper, diced
- 1 cup Onion, diced
- 2 stalks Celery, diced
- 4 cloves Garlic, minced
- 1 Jalapeno, minced
- 3 Tablespoon Cajun Seasoning
- 3 cup Tomatoes, chopped
- 1/4 cup Parsley, chopped
- 1 teaspoon Sugar
- 1 pound Shrimp
Directions
Rice
- Thoroughly rinse rice. Bring broth to a boil in a large suacepan.
- Add rice and remaining ingredients, return to a boil. Cover and simmer 30 minutes.
Creole
- Heat olive oil over medium heat in a saucepan. Add red pepper, onion, celery, garlic, and jalapeno and saute 5 minutes. Add cajun seasoning to the pan and saute another minute to toast the spices.
- Add tomatoes, parsley, and sugar. Stir together and simmer, covered, for 30 minutes.
- Stir in shrimp and cook 5 minutes, or until shrimp is cooked through.
- Serve over rice and enjoy!
