
Ingredients
Crust
- 1-1/2 cup Flour
- 1/2 cup Butter (cold, cubed)
- 1 teaspoon Salt
- 1/2 teaspoon Baking Powder
- 1/4 cup Vodka
- 2 Tablespoon Water
Filling
- 10 Eggs
- 5 ounce Spinach, wilted and chopped
- 16 ounce Breakfast Sausage, Crumbled and Cooked
- 1 cup Shredded Cheddar Cheese
- 3 ounce Goat Cheese (divided and crumbled)
- 3/4 cup Half and Half
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 teaspoon Red Pepper Flakes
Directions
Preheat Oven to 350*F.
Crust
- Mix flour, salt, and baking powder together in a large bowl. Using a pastry blender, cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Slowly add ice cold vodka and water to the mixture, stirring to bring together.
- Split dough into 8 equal pieces. Roll out and place in 8 individual mini pie tins (5 inch diameter), pierce bottom with a fork.
Filling
- Mix all filling ingredients, with only half the goat cheese, in a large bowl. Spoon out evenly into each pie tin. Top each with the remaining goat cheese.
- Bake for 45 minutes.
