Ingredients 

Crust 

  • 1-1/2 cup Flour
  • 1/2 cup Butter (cold, cubed)
  • 1 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 1/4 cup Vodka
  • 2 Tablespoon Water

Filling

  • 10 Eggs
  • 5 ounce Spinach, wilted and chopped
  • 16 ounce Breakfast Sausage, Crumbled and Cooked 
  • 1 cup Shredded Cheddar Cheese
  • 3 ounce Goat Cheese (divided and crumbled)
  • 3/4 cup Half and Half
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Red Pepper Flakes 

Directions 

Preheat Oven to 350*F. 

Crust

  1. Mix flour, salt, and baking powder together in a large bowl. Using a pastry blender, cut the cold butter into the flour mixture until it resembles coarse crumbs. 
  2. Slowly add ice cold vodka and water to the mixture, stirring to bring together. 
  3. Split dough into 8 equal pieces. Roll out and place in 8 individual mini pie tins (5 inch diameter), pierce bottom with a fork. 

Filling

  1. Mix all filling ingredients, with only half the goat cheese, in a large bowl. Spoon out evenly into each pie tin. Top each with the remaining goat cheese. 
  2. Bake for 45 minutes.
  3. Enjoy!
