Meatballs
- 2 pound Ground Chicken
- 1 Carrot, grated
- 1-1/4 cup Bread Crumbs
- 2 Eggs
- 1/4 cup Jerk Seasoning
- 1/4 cup Orange Juice
- 2 Green Onion, chopped
- 1 Jalapeno, diced
Glaze
- 1-1/4 cup Orange Juice
- 1/4 cup Lime Juice
- 1-1/2 Tablespoon Cornstarch
- 1 Tablespoon Jerk Seasoning
- 1 Tablespoon Honey
- 1/2 teaspoon Red Pepper Flakes
Cilantro Lime Rice
- 3 cup Water
- 1/4 cup Lime Juice
- 1/2 Tablespoon Honey
- 2 teaspoon Salt
- 1/2 teaspoon Red Pepper Flakes
- 1-1/2 cup Rice
- 1/3 cup Cilantro, chopped
Directions
- Mix all the meatball ingredients together in a large bowl. Form into balls about 1-1/2 to 2 inches in diameter. Place on a greased baking sheet. Bake meatballs 350°F for 35 minutes.
- Mix all glaze ingredients together in a small saucepan. Cook on medium heat, whisking constantly until mixture thickens. Coat all meatballs in glaze.
- For Cilantro Lime Rice: In a medium saucepan, bring water, lime juice, honey, salt, and red pepper flakes to a boil. Add rice, reduce to a simmer, and cook covered for 20 minutes. Uncover, fluff with a fork, and stir in cilantro. Serve with meatballs.
