Ingredients 

Meatballs

  • 2 pound Ground Chicken
  • 1 Carrot, grated 
  • 1-1/4 cup Bread Crumbs 
  • 2 Eggs 
  • 1/4 cup Jerk Seasoning
  • 1/4 cup Orange Juice 
  • 2 Green Onion, chopped
  • 1 Jalapeno, diced

Glaze

  • 1-1/4 cup Orange Juice
  • 1/4 cup Lime Juice
  • 1-1/2 Tablespoon Cornstarch
  • 1 Tablespoon Jerk Seasoning
  • 1 Tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes

Cilantro Lime Rice 

  • 3 cup Water 
  • 1/4 cup Lime Juice
  • 1/2 Tablespoon Honey
  • 2 teaspoon Salt
  • 1/2 teaspoon Red Pepper Flakes
  • 1-1/2 cup Rice 
  • 1/3 cup Cilantro, chopped 

Directions 

  1. Mix all the meatball ingredients together in a large bowl. Form into balls about 1-1/2 to 2 inches in diameter. Place on a greased baking sheet. Bake meatballs 350°F for 35 minutes.
  2. Mix all glaze ingredients together in a small saucepan. Cook on medium heat, whisking constantly until mixture thickens. Coat all meatballs in glaze. 
  3. For Cilantro Lime Rice: In a medium saucepan, bring water, lime juice, honey, salt, and red pepper flakes to a boil. Add rice, reduce to a simmer, and cook covered for 20 minutes. Uncover, fluff with a fork, and stir in cilantro. Serve with meatballs. 
  4. Enjoy!
