Ingredients 

  • 9 Eggs, hard-boiled
  • 1/3 cup Mayonnaise 
  • 1/2 Tablespoon Dijon Mustard
  • 1-1/2 Tablespoon Onion, minced
  • 1 small Jalapeno, diced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper

Garnish with Paprika 


Directions 

  1. Cut eggs in half and place yolks in bowl. 
  2. Add mayonnaise, mustard, salt, and pepper to bowl with the yolks and mash together with a fork until smooth. Stir in jalapeno and onion. 
  3. Fill each egg white half with about 2 teaspoons of the yolk mixture. 
  4. Sprinkle with paprika to garnish.
