
Ingredients
- 9 Eggs, hard-boiled
- 1/3 cup Mayonnaise
- 1/2 Tablespoon Dijon Mustard
- 1-1/2 Tablespoon Onion, minced
- 1 small Jalapeno, diced
- 1/4 teaspoon Salt
- 1/4 teaspoon Pepper
Garnish with Paprika
Directions
- Cut eggs in half and place yolks in bowl.
- Add mayonnaise, mustard, salt, and pepper to bowl with the yolks and mash together with a fork until smooth. Stir in jalapeno and onion.
- Fill each egg white half with about 2 teaspoons of the yolk mixture.
- Sprinkle with paprika to garnish.
