While pita bread is traditional for gyros, I find that it to be too heavy and prefer to use fried flour tortillas. To do this, place 2-3 tablespoons of oil in the bottom of a saucepan. Heat the oil well and fry tortillas on each side, about 20-40 seconds per side. It does not take much, only until the tortilla starts to ‘puff’ up: dab off excess oil on a paper towel. 


Ingredients 

  • 1 pound Ground Lamb
  • 4 cloves Garlic, minced
  • 2 teaspoon Rosemary
  • 1 teaspoon Marjoram
  • 1/2 teaspoon Oregano
  • 1-1/2 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 Tomato, sliced
  • 1 Cucumber, sliced
  • 1/2 small Onion, sliced
  • 1 cup Tzatziki Sauce
  • Pita Bread**

Directions

  1. Mix ground lamb with spices. Form into a loaf about 4″ x 6″ x 1.5″ in size. 
  2. Heat a cast iron skillet oven medium-high heat and sear about 3-5 minutes per side. Place the skillet with lamb in a 350°F oven and bake 30 minutes.
  3. Remove from oven and slice thin. 
  4. Assemble the gyros: top pita bread with sliced meat, tomato, cucumber, onion and tzatiki sauce. 
  5. Enjoy!
