
Ingredients
- 1/4 cup Tahini Paste
- Juice of 1 Lemon
- 8 clove Garlic
- 2 (15.5 oz) can Garbanzo Beans, drained (liquid reserved)
- 2 Tablespoon Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon White Pepper
- 1/2 teaspoon Red Pepper Flakes
- 1/4 teaspoon Curry Powder
- 5 Tablespoon Reserved Garbanzo Bean Liquid
- 1/2 cup Cucumber, chopped
- 1 Tomato, seeded and chopped
- 2 oz Feta Cheese, crumbled
- 1/3 cup Red Onion, chopped
- 1/4 cup Cilantro, chopped
Directions
- Place Tahini paste and lemon juice together in a food processor. Blend well until a thicker paste forms (about 2 minutes).
- Add garlic, garbanzo beans, olive oil, salt, white pepper, red pepper flakes, curry powder, and 5 Tablespoon of the reserved bean liquid. Blend well until smooth and has reached your desired consistency. Transfer to bowl.
- Mix together cucumber, tomato, feta, onion, and cilantro. Top hummus with vegetable mixture.
- Serve with tortilla chips, pita chips, pretzels, crackers, veggies, or your favorite dip-able!
*Note: Do not place vegetable mix onto the hummus until you are ready to serve. Storing the hummus with the vegetables on top will cause moisture to leach out of the veggies and into the hummus.
