
Ingredients
- 1 Tablespoon Butter
- 2 Shallots, diced
- 9 Apricots, chopped
- 1/4 cup Water
- 3 Tablespoon Soy Sauce
- 2 Tablespoon Brown Sugar
- 1 Tablespoon dried Basil
- 1/2 Tablespoon grated Ginger
- 1 teaspoon Red Pepper Flakes
- 3 pound Chicken Breast
Directions
- In a small saucepan, melt butter over medium heat. Add diced shallots and saute until they start to become soft.
- Stir in the apricots, water, soy sauce, brown sugar, basil, ginger, and red pepper flakes. Cook 5 minutes just so the apricots start to break down. Transfer apricot mixture to a blender or food processor and blend until smooth.
- Cut chicken breast into large cubes. Coat all the chicken pieces in apricot sauce and place on skewers.
- Grill skewers until chicken is fully cooked, basting with any remaining sauce that may remain.
- Serve and enjoy!
