  • 1 Tablespoon Butter
  • 2 Shallots, diced
  • 9 Apricots, chopped
  • 1/4 cup Water
  • 3 Tablespoon Soy Sauce
  • 2 Tablespoon Brown Sugar
  • 1 Tablespoon dried Basil
  • 1/2 Tablespoon grated Ginger
  • 1 teaspoon Red Pepper Flakes 
  • 3 pound Chicken Breast 


  1. In a small saucepan, melt butter over medium heat. Add diced shallots and saute until they start to become soft. 
  2. Stir in the apricots, water, soy sauce, brown sugar, basil, ginger, and red pepper flakes. Cook 5 minutes just so the apricots start to break down. Transfer apricot mixture to a blender or food processor and blend until smooth. 
  3. Cut chicken breast into large cubes. Coat all the chicken pieces in apricot sauce and place on skewers. 
  4. Grill skewers until chicken is fully cooked, basting with any remaining sauce that may remain. 
  5. Serve and enjoy!
